Recognized as “Best Chef: California” by the prestigious James Beard Foundation, Chef Charles Phan is the trailblazer of modern Vietnamese cuisine in America. Creating elevated Vietnamese cuisine with products sourced from the surrounding region and informed by its unique terroirs is a welcomed creative endeavor for the innovative chef who shares in a lifelong love of Burgundy.

I have always loved the wines of Burgundy, and David and I have been longtime friends. When he told me about his new project in France, I knew it was another step for me to grow, focus on the beautiful local ingredients surrounding Beaune, and bring a special, unique experience to this incredible destination.

Wine Program & Bar Experience

Led by Mark Bright of Saison and Angler in San Francisco and Antoine Rozier, head sommelier for Slanted Door, our wine list holds an impressive collection of burgundy wines as well as other European wines from throughout Europe. Our wine list includes extensive burgundy wines in an ample selection of vintages, as well as wines from a multitude of wine-producing regions throughout Europe. Bottles from as early as 1920 are held in our collection. Our full bar located in Slanted Door is open 7 nights a week. Take your pick of a selection of rare whiskeys, chartreuse, wines, and cocktails.

Mark’s place on the Maison 1896 team is a homecoming of sorts. It was Véronique Drouhin who first introduced him to the process of winemaking when he was 15. By the age of 21, Mark was a sommelier. In 2009, Mark co-founded and opened Saison in San Francisco, a two Michelin star restaurant that has been awarded a Wine Spectator “Grand Award” every year since 2014. Mark later went on to co-found Saison Hospitality Group which comprises a number of restaurants as well as a winery, cellar, and wine bar.

Bringing this fantastic new concept to Beaune feels like the actualization of a life-long passion in partnership with cherished friends.
